Extra Food at Closing Time? A Guide for Islamabad Owners

A calm, 5-step way to turn the trays that did not sell into something that pays you back.

You got up before sunrise. You cooked, baked, served and cleaned. And at closing time you stand in front of the trays that did not sell, and something tightens in your chest.

That feeling is real. It does not mean you did something wrong. It is what happens when you make fresh food for people you cannot predict. Every kitchen in Islamabad knows it.

Here is a calm, simple way to turn that moment into something better.

Step 1: Count it for one week

Do not guess. For 7 days, write down what is left at closing: the item, how many, and the time. By the end of the week you will see a pattern. Maybe it is always the 6pm bread. Maybe it is Thursday biryani. Once you can see it, you can plan for it.

Step 2: Choose what stays good

Not everything should be sold a second time. Choose items that are still fresh the same day and can be handed over cleanly: baked goods, packed meals, sealed items. One simple rule: if you would not eat it yourself, do not sell it. Your name is on that box.

Step 3: Pick a short pickup window

The last hour or two before you close works best. Customers know exactly when to come. Your team knows exactly when to have the boxes ready. No stress and no chasing.

Step 4: Set the price yourself

You know your costs better than anyone. A clear step down from your normal price gets people interested, and it stays fair to the customers who pay full price all day. You are not giving food away. You are choosing a fair price for the end of the day.

Step 5: Pack small and label it

Small portions, clean boxes, and a simple label with the item and the date. It takes one minute, and it shows people that you care.

Why this matters beyond your till

The UN Environment Programme estimated that 1.05 billion tonnes of food went to waste around the world in 2022. Restaurants, cafes and other food services made up 290 million tonnes of that. Read the UN summary.

One bakery selling its evening trays instead of throwing them away will not fix that alone. But it is a start, and you can see it in your own cash drawer. For the numbers closer to home, read Why Islamabad's Bakeries Are Losing Rs 50,000 a Month.
