Walk past any bakery in F-7, F-8 or F-10 Markaz at 9pm. Peer through the window. There is almost always food visible croissants, cakes, pastries, bread that will not be there in the morning, but not because it sold.
This is the quiet cost of running a food business in Islamabad. It does not appear as a line item on a profit and loss statement. It shows up as a slightly lower margin than it should be, every single month.
The maths that most owners have not run
